I have two words: YUM-MY! A mixture of sweetness from the pineapple and heat from the peppers makes the perfect combo. It was great on tacos and pork chops we had last week and awesome with melted cheese mixed in for a chip dip!

Easy Homemade Crackers
I LOVE crackers. Last week I found we were out and the store was closed. So what's a girl to do?
Make them herself of course!
Directions
- The thinner the rolled dough the crunchier the cracker and less cooking time required.
- Crackers will become crunchier as they cool.
- Give crackers a zesty kick with spice combinations.
- Use butter flavored shortening for a Ritz-like cracker.

Lunchbox Friendly Fried Pie
Fried pie will be a popular lunch box treat this year. It is portable and portion controlled is SUPER simple making this the perfect lunch box treat.
There's so many tasty ways to enjoy fried pies. Savory. Sweet. Hearty. Decadent. It is perfect as a main course, appetizer or dessert! It's also fabulous at party's, picnics, and large gatherings! Here's a few tasty pie filling ideas:
- cookie dough
- ham, cream cheese, and sharp cheddar
- tomatoes and cream cheese
- fruit and jam
- marinara, mozarella, and pepperoni
- shredded meat with gravy
- shredded chicken with taco or enchilada sauce and cream cheese
- pot pie filling with mixed veggies
- candy bar chunks
- marshmallow and chocolate chunks
- peanut butter and chocolate
- peanut butter and jelly or jam
- bacon, sausage, scrambled eggs, and cheese
- baked beans with crumbled bacon
The list goes on and on!
Fried pies can be made with your favorite pie dough recipe or the store bought version works well too! Make them in fun shapes to make lunch time even better!
- Heat vegetable oil to 375 degrees. (I use a deep fryer but a few inches of oil in a pan works too.)
- Mix 1 cup all purpose flour, 4 tbsp shortening, and enough cold water to form a ball of dough.
- Roll it out on a lightly floured surface to about 1/8" inch thick.
- Use a biscuit cutter or a large glass to cut rounds.
- Place filling on one side of the round, wet the outer edge with water, fold over and pinch closed. Pinch the edges several times to make sure it seals properly.
- Fry till light golden brown-usually around 4 minutes.
- Drain on a rack placed inside a baking pan.
- Roll sweet fried pies in granulated sugar or top hearty pies with shredded cheese or garlic salt or other spice combo.
- Store in air tight containers in refrigerator or freezer. Reheat in microwave or oven (oven maintains the crisp flaky pie texture).
Dough Tips: Lots of people use butter instead of shortening in their pie dough. The trick with butter is to work with it quickly so it stays cold. I don't have a food processor making it difficult to work with the cold butter quickly enough to get a good pie crust. Butter flavored shortening will give you the buttery taste without the hassle of working with pie dough.
Recipe Tips: I find half moon shapes are easier to make and work better in the fryer than a whole circle shape. Half moons flip easier in the fryer and cook more evenly. If you are really good with frying pies, then go for more fun shapes like hearts, stars, etc.
A healthier alternative: prepare as but score tops with a fork for ventilation and bake in oven heated to 350 till golden brown. I'm southern so I like 'em fried!

Cherokee Huckleberry Bread
2 c Self-rising flour
1 c Milk
1 Egg
1 ts Vanilla extract
1 c Sugar
2 c Berries huckleberries or blueberries or your favorite
1 Stick of butter
Cream eggs, butter and sugar together. Add flour, milk, and vanilla. Sprinkle flour on berries to prevent them from going to the bottom. Add berries to mixture. Put in baking pan and bake in over at 350 degrees for approximately 40 minutes or until done. Yield: 1 loaf.

Cast Iron Pan Candy
- Melt butter in a cast-iron frying pan over medium-low heat.
- Add sugar.
- Stir.
- The sugar will melt and meld with the butter (this is fun to watch).
- Continue to cook and stir for 10 to 15 minutes.
- When the mixture has caramelized to a light brown color and
smells rich, it’s done. Be careful not to let it become dark brown and
burnt. - Mix in optional flavorings, such as vanilla, rum, lemon juice or herbs to taste.
- Pour in small amounts or spoon onto waxed paper. Let cool.
Note: The more butter, the richer the candy. For
the smoothest texture, the butter and sugar should be in approximately
equal proportion. If using unsalted butter, a half-pinch of salt may
brighten the flavor.

Recipes Graham Cracker & Cream Cheese Frostin
Ingredients
2 1/2 cups plus 2 tablespoons unbleached pastry flour or unbleached all-purpose flour
1 cup dark brown sugar, lightly packed
1 teaspoon baking soda
3/4 teaspoon kosher salt
7 tablespoons (3 1/2 ounces) unsalted butter, cut into 1-inch cubes and frozen
1/3 cup mild-flavored honey, such as clover
5 tablespoons whole milk
2 tablespoons pure vanilla extract
For the topping:
3 tablespoons granulated sugar
1 teaspoon ground cinnamon
In the bowl of a food processor fitted with the steel blade or in the bowl of an electric mixer fitted with the paddle attachment, combine the flour, brown sugar, baking soda, and salt. Pulse or mix on low to incorporate. Add the butter and pulse on and off on and off, or mix on low, until the mixture is the consistency of a coarse meal. In a small bowl, whisk together the honey, milk, and vanilla extract. Add to the flour mixture and pulse on and off a few times or mix on low until the dough barely comes together. It will be very soft and sticky. Turn the dough out onto a lightly floured work surface and pat the dough into a rectangle about 1 inch thick. Wrap in plastic and chill until firm, about 2 hours or overnight.
To prepare the topping: In a small bowl, combine the sugar and cinnamon, and set aside.
Divide the dough in half and return one half to the refrigerator. Sift an even layer of flour onto the work surface and roll the dough into a long rectangle about 1/8 inch thick. The dough will be sticky, so flour as necessary. Trim the edges of the rectangle to 4 inches wide. Working with the shorter side of the rectangle parallel to the work surface, cut the strip every 4 1/2 inches to make 4 crackers. Gather the scraps together and set aside. Place the crackers on one or two parchment-lined baking sheets and sprinkle with the topping. Chill until firm, about 30 to 45 minutes. Repeat with the second batch of dough.
Adjust the oven rack to the upper and lower positions and preheat the oven to 350 degrees. Gather the scraps together and repeat above process to get about two or three more crackers.
Mark a vertical line down the middle of each cracker, being careful not to cut through the dough. Using a toothpick or skewer, prick the dough to form two dotted rows about 1/2 inch for each side of the dividing line. This vents the cracker and prevents domes from occurring during baking Bake for 25 minutes, until browned and slightly firm to the tough, rotating the sheets halfway through to ensure even baking. Yield: 10 large crackers

Cream Cheese Frosting
1 8-ounce package of cream cheese
2 tablespoons butter, softened
1 teaspoon pure vanilla extract
3 cups of powdered sugar, sifted
Beat the butter in the bowl of an electric mixer until creamy. Mix in
the cream cheese and beat until light and fluffy. Stir in the vanilla
extract and when fully incorporated add the powdered sugar. Mix until
smooth and creamy. Place in the refrigerator for an hour before using.

KaRaisin Cookies Recipe
I'm sure you'll loveIngredients
- 1 Box Carrot or Spice Cake Mix (any brand)
- 1 Egg
- 1/2 Cup Vegetable Oil
- 1/2 Cup Cold Water
- 1 Cup Raisins
- 3 Squares Almond Bark
sheet and bake 7 minutes. Place cookies on wire rack to cool. After last batch of cookies is done, place 3 squares of Almond Bark in a sealed zipper sandwich bag. Microwave 15 to 30 seconds at a time being careful not to scorch bark. (Be very careful here, Almond Bark scorches VERY quickly). Massage bag to ensure even melting, snip off SMALL tip off corner of bag and pipe onto cookies. Allow to completely cool and enjoy! Makes about 3 dozen!

Cheeseburger n Fries Casserole
Now this is MY kind of casserole!!!!
Ingredients
2 lb Lean ground beef
1 cn (10 3/4 oz.) cond. golden mushroom soup, undiluted
1 cn (10 3/4 oz.) cond. cheddar cheese soup, undiluted
1 pk (20 oz.) frozen crinkle-cut French fries
Directions
In a skillet brown the beef; drain. Stir in soups. Pour into a greased 13 " x 9 " x 2 " baking dish. Arrange French fries on top. Bake, uncovered at 350 degrees F for 50 - 55 minutes or until the fries are golden brown.
